How do you dry out a scoby?

I don't have a dehydrator. Can I still dry out the scoby?

I had it sitting on a plate on my dining room table, with a plate covering it. Every 12 hours or so, I'd flip it over, to help air out the other side. 2 days later...and they're still as moist as they were when I started. there's little flies flying around. So I moved them outside. I took off the cover plate, and now I have my scoby sitting outside on my patio on a plate...but no cover.

Is this okay for drying it out? I was planning to feed it to my dog, or use it in leather-crafts. Tips?
