Hey everybody. I'm on my 3rd and 4th batches now. I had a question about the SCOBYs. It it good to stack the SCOBY's - baby and mother - in new batches? Or is better to have just one SCOBY in each jar? Does having more SCOBYs in the jar make for better brewing and/or fermentation?
Also still trying to get the carbonation better. Trying a secondary fermentation with a bit of ginger juice. Waiting at least 10 days before I bottled seemed to create more fizz. Any tips are appreciated.

Wed, August 12, 2009 - 12:31 AMthey don't usually merge into one body, as you can see from their making new ones, so i would think only one per jar is all that is required to make it perk.

Tue, August 18, 2009 - 12:36 AMtry a pinch of sugar before capping off your secondary fermentation & shaking to mix. I got the suggestion from a beer brewer & it really helps! Feeds the yeasts or bacteria or something.. I usually do a 7-10 day 2nd ferment & always have a nice fizz now.
Also, I don't think it matters if you have more than one scoby. I had a problem when I split the scobys so I could have more batches & used a pretty thin one for one of the batches. I took a lot longer for the 1st fermentation on that one. Haven't had a problem with stacked scobys and it doesn't seem to make the process faster, for me anyway :-)
