    <summary type="html">i seldom bottle it. (im lazy) but i got one of those two gallon mason jars with a glass lid (i just remove the rubber and metal hardware). the lid sets flush enouph that the fruit flys don't get in, yet it allows it to breath as needed. I have to be attentive, to keep just the right balance, but when i do, then i just pour out my two or three serving a day, and replentish that much tea as well. obviously, in warm weather i drink more, as it brew faster.&#xD;
&#xD;
if i do bottle it, its great to add a tiny bit of rooibos tea and peach puree. when that carbonates- heaven.</summary>

    <summary type="html">I suggest that you leave the kombucha at room temperature for 3-5 days after you bottle.  i learned this trick last year and now all of my batches have excellent carbonation.  when you take the SCOBY out of the tea make sure you keep a little starter tea with it and dont leave it "dry".  Also make sure that your next batch is cooled off so yuo can quickly  add it.&#xD;

    <summary type="html">....but if you forget, or something happens, you can just use a few tablespoons of plain white vinegar, too.  Kombucha is pretty forgiving once it gets going.</summary>

    <summary type="html">Don't worry about the floating scoby, it will rise to the top once it starts to ferment. I drank my first batch in about three days, it was refreshing and delicious. I reused the mother scoby because she was hefty, and I composted her baby. Next time I will just use both.&#xD;

    <summary type="html">So I started brewing yesterday after receiving my scoby in the mail. I followed the directions exactly and used 100% all natural loose jasmine green perals and silver needle white. My scoby is sideways in the jar though, and I was under the impression it was suppose to float on top. Is it okay?&#xD;
&#xD;
Also, once it's done, and I go to bottle it and add fruit/ginger, I just take the mother and baby out and can start two new batches right after right? &#xD;
&#xD;
Do I refrigerate bottled kombucha?&#xD;
