i keep hearing about fermenting twice.
how do you do it? why do it? how does it change the taste?
i was only told to ferment once, but you guys seem to do it twice.
can i have information on how you ferment?

Tue, May 6, 2008 - 5:39 PMthe second fermentation takes place after you bottle your kombucha. you can put the bottles of kombucha in a pantery or somewhere else for a few days before refrigerating it. this will cause it to be more biubbly and such and is called the second fermentation. -

Some people put a dash of sugar or a little fruit juice for the scoby to eat and make a few more bubbles. -

Mon, May 12, 2008 - 11:39 AMSome people strain the Kombucha before the second fermentation so as not to get little floating bits of scoby while others just pour it directly into bottles. But you don't need to put the scoby you used for your initial brew into the bottles.
