Decaf Kombucha

Hi all, i just started my first batch about 8 days ago. I am trying to brew decaf Kombucha because i have not been able to find some out there. I have High blood pressure and cant have to much caffeine but still enjoy it. I am worried because here it is day 8 and i dont have a SCOBY. I have a very thin layer on top and some tiny bubbles on the outside rim. The top part of the batch tastes bitter but the underside tastes really sweet. Now i was wondering if this is because i am using decaf? or is it because it might be to cold. (my house stays at about 65 at all time)

    Sorry i forgot to mention i am using Decaf green tea, and used organic brown sugar as sweetener.

      probably too cold. sounds good if the film is developing. sometimes it can take a bit more time than normal.

        all kombucha becomes decaf as it eats all the caffeine....

          Ok thank you! I know that when i have GT's i get a caffeine rush. So i was worried about it not working when i make it at home.

            heard the caffeine is transformed into decaf.... the b vitamins produced are a buzz too....
            l use a light bulb under a shelf and cover it all with a wool blanket... there is a sm fire danger so make sure the bulb isn't touching anything and l use a 60 watt....

              This is a topic that comes up every 6 months or so. Some claim that the kombucha fermentation removes the caffeine, some claim that it doesn't. I haven't yet seen any proof either way.

              What most if not all kombucha brewers do agree on, however, is that the brewing process works better with at least some caffeine. Personally I have had great results using half decaff and half regular, whether it is green or black tea.

        Any tips on how to keep it warm? i have it setting on a stand in the living room sense that is the warmest room.

          to be really honest, i have no idea where the caffeine 'would go' - when it is digested, it is still in the jar. there is nowhere for the caffeine to go, and i have seen nothing in chemistry to suggest the caffeine is metabolized, like, in a human body. but anyways, you should be fine anyway.

          i haven'et tried it, but i would bet a heating mat from the nursery (for sprouting seeds) would work fine, and not get too hot. make sure you cover it, to reduce light to it. and putting it in an area that is more breeze free (little micro currents of coolness really can affect the overall tempurature. Or situate your jar near to your heating source for your home. (just not TOO close, :)

          I use a Seed Heat mat (you can get them at hardware/garden stores), and it's the perfect temperature to keep the kombucha happy and doing its thing.
