when to split a SCOBY

Looking forward to bottling my latest batch of kombucha tonight. Seems like the thicker my SCOBY gets, the faster it eats up the sugar in a gallon of sweetened tea. Wonder how I will know when it is time to split her in two? Also, if I let it get thicker and thicker, will it produce the elixer faster and faster?
